This (crappy) photo doesn’t do these justice.  I was pleasantly surprised with these as I was admittedly a little apprehensive as I just don’t love turkey burgers.   I wasn’t sure if the same would hold true for chicken.  However, these were a pleasant surprise!  My only change was that I definitely had to cook the burgers for 2 – 3 times as long until I thought they were sufficiently cooked through!

Chicken Parmesan Burgers


  • 1 lb. ground chicken, breast meat
  • 1/4 cup grated parmesan cheese
  • 1/4 cup plain bread crumbs
  • 2 tsp. Italian seasoning
  • 1/4 cup flat leaf parsley, chopped
  • 1 clove garlic, finely minced
  • 1 shallot, finely diced
  • salt and pepper
  • 1/2 cup pasta sauce
  • 4 slices or 1/2 cup shredded mozzarella or provolone
  • 4 buns, brushed with garlic or regular butter

Gently mix all of the burger ingredients together, and form into four patties.  Try to do this about 30 minutes ahead of time so that all the flavors can combine.

Pre-heat the broiler.  (Or grill)  Spray your broil pan with a little non-stick spray and broil the burgers for about eight minutes on the first side (Elly said 4 – I definitely needed longer than that so just keep an eye on them!), then flip and broil for three minutes.   Once cooked through, divide the sauce evenly over the burgers and the same with the cheese.  Put under the broiler for 30-60 seconds, until cheese in melted.  Place the buns in the broiler for about 10 seconds until just toasted.
