This was a great compliment to our pulled pork sandwiches, and barring a few adjustments (slightly reducing the mayo and mustard reflected below), I will definitely be making it again!
Creamy Cole Slaw
Adapted from Tyler Florence via the Food Network
- 1 head green cabbage, shredded (or 1 bag of the shredded cole slaw mix)
- 2 carrots, grated
- 2 green onions (white and green parts), chopped (I omitted because I didn’t have any, but I think it would have been good in this!)
- 1 1/4 cups mayonnaise
- 3 Tbsp. Dijon mustard
- 1 Tbsp. cider vinegar
- 1 lemon, juiced
- 1 Tbsp. sugar
- 1/2 tsp. celery seed
- Several dashes hot sauce, optional
- Kosher salt and freshly ground black pepper
In a large bowl, combine the mayonnaise, mustard, vinegar, lemon juice, celery seed, and sugar. Add to that mixture the cabbage, carrots, and green onions and toss gently to mix. Season the cole slaw with the hot sauce, salt, and black pepper. Chill for 2 hours before serving.
