I really enjoyed this dish and can’t wait to make it for a summer BBQ next year.  It was super easy and delish.  Perfect for our weeknight meal, and healthy to boot!

Cilantro Lime Chicken with Avocado Salsa

  • 2  tablespoons  fresh cilantro, minced
  • 2 1/2  tablespoons  fresh lime juice
  • 1 1/2  tablespoons  olive oil
  • 4  (6-ounce) skinless, boneless chicken breast halves
  • 1/4  teaspoon  salt
  • Cooking spray
  • 1  cup  plum tomato, chopped
  • 2  tablespoons  red onion, finely chopped
  • 2  teaspoons  fresh lime juice
  • 1/4  teaspoon  salt
  • 1/8  teaspoon  freshly ground black pepper
  • 1  avocado, peeled and chopped

For the chicken, combine chicken, olive oil, cilantro, and lime juice in a large bowl; toss and let stand 3 minutes. Remove chicken, and discard marinade.   You can cut the chicken into chunks or strips if desired.  Sprinkle chicken evenly with 1/4 teaspoon salt. Heat a grill pan over medium-high heat. Coat pan with cooking spray, and add the chicken to pan; cook 6 minutes on each side or until done.

Salsa: Combine everything but the avocado.  Then gently add in the avocado and serve on top of the chicken.
