Corrie (husband) heard some lovely news today, so I decided to throw together a quick batch of celebration cookies before trivia. We join our Knoxville friends (okay, okay, the only ones – we’re working on that!) for live trivia night each Wednesday – one of the highlights of our week – it’s always a good time. After a quick ‘cheers’ with a couple cookies; I took the rest up there to remove the danger from our household. The very kind boys gave rave reviews and helped put quite a dent in the supply (thank goodness!)…
Peanut Butter & Chocolate Chip ‘Celebration’ Cookies
- 1 1/2 cups all-purpose flour
- 1 tsp baking soda
- 1 cup peanut butter
- 4 tbsp unsalted butter, room temperature
- 1/2 cup packed brown sugar
- 1/2 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 8oz semisweet chocolate chips (I used a mixture of regular and mini-chocolate chips, because I wanted to use up some half-full bags.)
Preheat oven to 350.
Combine flour and baking soda in a bowl, and set aside. In your mixing bowl, beat peanut butter, butter, and sugars until light and fluffy. Add eggs and vanilla, and beat until smooth. Add flour mixture gradually on low speed, beating until combined, and then add in the chocolate chips.
Drop heaping tablespoons of the dough onto cookie sheets and bake until golden, 13 to 15 minutes. Transfer cookies to wire racks to cool.
